You will need:
- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon Kosher salt
- 1/2 cup lard or vegetable shortening
- 1 cup hot water
- large griddle or skillet
Instructions:
Begin by putting flour in a medium bowl and mixing in baking powder and salt.
Add lard and work into other ingredients with a pastry blender until there are no longer large chunks.
Slowly stir in hot water until a sticky dough forms. Add a sprinkle of flour if needed.
Knead dough until smooth.
Cover and let rest for 15 minutes.
After rising, separate dough into 2 inch balls.
Press flat between waxed paper with a tortilla press, or roll out with a rolling pin.
Heat griddle and flip dough onto hot surface. Cook for about 1 minute.
Flip and let cook for 30 seconds on the other side. You want the tortilla to be soft but have a few light brown spots on the surface.
