Flan is a very popular Latin American dessert. I grew up eating it when I lived in Central America. It can be described as a custard with a caramelized sugar topping. One thing I’d say about flan, you either love it or you hate it. I love it. My kids? – not so much.
Ingredients:
- 1/2 cup of sugar
- 3 eggs
- 1 1/2 cups of milk
- 1 can of sweetened condensed milk
- 1 teaspoon of vanilla
Instructions:
Caramelize the sugar by putting it in a small saucepan over medium heat. Stir constantly to avoid scorching. Note: It may be faster to caramelized the sugar in a larger saucepan so that the sugar is in a thinner layer over a greater surface area.
Once the sugar becomes a golden liquid, immediately pour it into a 1 – 1.5 quart mold. Be careful not to overcook and scorch the sugar.
Next, use an electric mixer to combine the remaining ingredients.
Pour the mixture over the caramelized sugar in the mold. Then set the mold in a pan of water.
Cook at 350° for approximately 45 minutes or until set. We recommend checking it at 30 minutes. Allow the flan to cool before unmolding. It may be necessary to loosen the caramelized sugar by setting the mold in hot water. Then turn the mold over onto a plate. ¡Buen provecho!
